If you are doing the Crossfit Open like me, you might need some serious crappy food right about now (that's where this recipe comes in.) I know a lot of people that are digging 14.4, but I know just as many that are dreading one, two, three or all parts of the chipper.
Short people weren't made for rowing, but I'll get over it and drag my butt to the gym Saturday morning.
In another random note, I posted my newest diet revelation on Facebook the other day and it seemed to get a lot of attention so I just wanted to repost my best tip for sticking to a diet: Eat Naked (or in your underwear if that's how you roll).
Yesterday was day 6 of strict paleo and I was craving something junky like chips or fries. There are a bag of Tostitos in my pantry and I though how easy it would be to cover them with cheese and eat them. Then I tried on my new shorts and sports bra and decided against it. Instead, I stayed in a more than revealing outfit while I enjoyed my chicken breast and broccoli. I didn't feel guilty about any bite I took, Thus, eat naked. You will think about what you put in your body a whole lot more.

And, here's why you're here...the recipe

2 pounds ground chicken
2 eggs
1/2 cup coconut flour + 1/2 cup coconut flour
4 tbs flax seed meal + 4 tbs flax seed meal
3 tbs almond flour
1 cup plus 4 tbs Franks Hot Sauce
1 tsp garlic
1 tsp onion powder
1 tsp salt + 1 tsp salt
1 tsp pepper
1/2 tsp cayanne pepper
6 tablespoons fat of choice (I used grass fed ghee), Melted
Directions:
1. Combine ground chicken, eggs, 1/2 cup coconut flour, 4 tbs flax, almond flour, 4 tbs Franks, garlic, onion powder, salt, pepper and cayenne pepper until well mixed
2. Form small "meatball" shaped balls with the meat (makes about 40) and place on baking sheet lined with parchment paper
3. Combine remaining salt, coconut flour, and flax in a small bowl
4. Coat the chicken "meatballs" in the coconut flour mixture
5. Using a spoon or spatula, flatten balls into nugget shape
6. Bake at 375 for 20 minutes
7. While chicken is cooking, melt fat and mix in 1 cup franks into a small bowl
8. Dip cooked chicken into franks/fat mixture
9. Cook for an additional 5 minutes
Serve with paleo ranch and celery and enjoy!
