I'm not going to lie. I had absolutely no idea what chorizo was until I embarked on the paleo adventure. Still, basically what I know is it's pork sausage and I have the kind that is nitrate free. I also know I like the way it tastes. So it's a win in my book. I started this post two days ago, and then life happened. You know the kind where kids get sick, chocolate milk spills, yogurt stains, dogs have accidents, plastic swords become projectiles and schools need volunteers. As I type, Jax is hanging off one arm ,cinnamon bun in the other watching Incredibles. I'm also staring at two loads of laundry I have successfully folded, but they remained not put away.
I reached a point last week though where I realized I spent so much time "doing" other stuff and very little just having fun with the kids. So, I now type with a mini Incredible smearing icing on my arm and taking turns saying lines from the movie. I wouldn't change this for anything. And Thank God AdvoCare has given me the vessel to never have to go without this feeling again.
Anyway... Back to the food. In the 2 hour nap time window I was able to prep and cook homemade paleo snack bars (they turned into more of a dessert and an addiction), bacon wrapped meatballs, chorizo quiche, buffalo chicken minis, and breakfast sandwiches. I've found that if I just get going and commit to making the biggest mess possible, I can knock it all out within nap time. Then, I'm not faced with the tempting task of ordering Dominos...not that that happens..

1 pound chorizo
10 eggs
1 small zucchini chopped
1 small squash chopped
2 cups fresh spinach
1 tablespoon onion powder
1 teaspoon salt
1 teaspoon pepper
1 teaspoon garlic powder
1 tablespoon flax
Directions
1. Cook the chorizo in a frying pan, drain any excess grease
2. In a bowl, whisk the eggs and add the seasoning and spinach
3. Remove the Chorizo from the pan, do not wash the pan. Add chopped squash and zucchini and sauté for about 3-4 minutes until tender, not "mushy" (is that a word?)
4. Add remaining ingredients to the bowl and mix well.
5. Pour into a greased 9X12 dish and cook at 375 for 25-30 minutes.
Depending on the type of chorizo, you can always add a few tablespoons of Red Hot for a little extra kick
