I didn't die. I didn't quit blogging. I didn't give up the internet. Life just got WAY busy and it's hard to get back on track after you have fallen off.
I feel that way about exercise, diet, hobbies, really anything that you consciously make an effort to do as part of your routine can hard to start up again after a break. For me, we had birthdays, beach trips, Virginia trips, end of the school year, and I spent the last month evaluating my diet, training and goals.

Each person defines beauty and attractiveness as something different. Everyone is comfortable with looking a particular way and for me I miss the petite stature I once had. And I REALLLLLY miss fitting in my shorts. My hope is to not only tone and tighten (cutting out sugar for the most part), but to lose about 10 pounds along the way. The weight, however, is not my primary concern and I rarely step on a scale. Success will come when I feel comfortable getting on stage in a swimsuit and feel like a woman.
So in order to achieve these goals I am slightly altering my diet. I wanted to give a little background on why recipes or meal plans may change from previous posts and the reasoning behind a diet that may seem like a little amount of food.
Now, I am training with a new goal. I am no longer training in hopes of competing RX. I am now training for Mrs. North Carolina. For those of you who don't know, I spent a lot of my life competing in and working for various pageant systems. It's something that I miss and something that will be just for me.
If, by some crazy reason, someone reading this want to sponsor me, I will be setting up a fundraising page in the next few months. I am also looking for a local photographer (greater Raleigh area), skin care/ air brush tanning/ makeup and hair consultant, wardrobe and travel sponsorship and appearance opportunities.
Of course, with training for a pageant I feel I need to cut back on the super heavy (for me) lifting and up the cardio. I need to create longer, leaner muscles and not continue building the bulky muscles I am beginning to see. So, I might even find myself in a yoga or Pilates class. Yikes. Oh and this doesn't mean I'm quitting crossfit. I actually love crossfit. I love knowing that I can lift weights and be humbled daily by a workout. I just won't be using the RX weight or going for max weight.
*Disclaimer-I'm competing with a team in Hilton Head in a few weeks. Therefore the next three weeks diet will look pretty similar to the past plans.. Gotta have energy to go get my ass handed to me.

Here is the food. Be careful with the Stawberry Crumble. It's addicting. Especially if you add something not paleo like cool whip. Or perhaps paleo vanilla ice-cream? For real it's good. Like Drew and I ate a whole container in a sitting good.
Cajun Shrimp
1 pound uncooked, peeled, tail off Shrimp
1 tbsp cajun seasoning (I like trader joes)
2 tbsp ghee
1 tsp minced garlic
1/2 c coconut cream
1/2 tsp basil
2 tbsp almond flour
1/8 tsp pepper
1/2 c diced green peppers
1/2 c diced onions
1 sliced zucchini
1/2 tbsp paprika
1/2 tbsp salt
1/2 tbsp onion powder
1/2 tbsp thyme
dash of cayenne
Combine basil, pepper, garlic and coconut cream in a small sauce pan over the lowest heat, stirring occasionally. Add almond flour to thicken.
Combine the rest of the seasoning and spices in a small boat. Coat the peppers and onions with a third of the mixture. Add Ghee to skillet and begin cooking peppers and onions for about 5 minutes. Coat the shrimp in the remaining seasoning and add to sauté pan. Cook until shrimp are solid pink through. Toss in the coconut cream sauce and serve over zucchini noodles. We ate ours over brown rice.
Strawberry Crumble
*I adapted a recipe for a pie to make this, and it is GOOD!
2 cups diced strawberries
zest of lemon
3 tbsp honey
pinch of salt
-crumbles-
1/4 cup honey
3 tbsp coconut oil
1/2 cup chopped pecans
1/2 cup almond flour
1/4 cup chopped walnuts
1 tsp cinnamon
1/4 tsp salt
Combine filling ingredients and fill a 8 X 8 dish
Combine pecans, almond flour, walnuts, cinnamon, salt and honey. Slowly add oil until you get a crumble consistency. Add on top of the filling and cook at 350 for about 25 minutes.
Then eat all of it.
