How is it already November?! I hate cold weather and everything it brings along with it. Put me back on a beach somewhere and I'll be satisfied...unless I'm chasing Jax as he tries to catch fish, with his mouth, because that's how the bears do it on Brave.
This weekend has been a challenge to eat clean since we traveled to RVA. It's always nice to get to see friends, but with that comes a lot more alcohol and junk food than I care to admit. Alcohol meaning we started the day with some delicious beer in Willow Lawn, continued with wine as we got ready and then had a night with some of my favorite people from high school.. and I'll give you a hint, it involved more beer.
At least I ate healthy.. so I should get an A for Effort for that.
I was looking for something I could make for a meal or a snack and after trying a few recipes I settled on this gem. Of course, I was slightly disappointed Scotch Eggs didn't actually contain scotch....

6 medium eggs
1 pound (500 grams) lean ground pork
1/2 tsp cinnamon
1/2 tsp ground ginger
1/4 tsp allspice
1/4 tsp nutmeg
1/4 tsp cloves
1 tablespoon of maple syrup (pure, 100%)
2 tsp teaspoons salt
Preheat oven to 375 degrees.
Make hardboiled eggs (boiling water, 10-12 minutes)
Remove the eggs from the water and let cool until they are cool enough to handle.
Peel the shell off the eggs.
When the eggs are cooling, mix sausage and spices in a bowl
Divide sausage mixture into 6 sections.
Flatten each sausage section and mold it around the cooked egg and then place the sausage wrapped egg on a baking pan.
Bake for 30 minutes or until sausage is cooked throughout and slightly browned on top.
