I was messing around with a chocolate donut recipe the other day and couldn't seem to get it just right. I also had a box of strawberries that needed to be consumed, like immediately. I decided to try and combine the two..the result was delicious. I only had a small donut pan available (I went and bought a normal sized one immediately after this), but I almost prefer the tiny ones. I filled the pan up with the mix over the top and it created a nice little bowl to fill with strawberries and melted chocolate. Winning combination!

- 2 Cups Almond Flour
- 3 Tablespoons + 1 Teaspoon Dark Cocoa Powder
- 1/2 tsp baking soda
- 4 Eggs
- 1/3 cup honey
- ¼ cup coconut oil, melted
- 1 teaspoon vanilla
- 4 eggs
- 1 Cup fresh strawberries, chopped
- 1/3 cup Enjoy Life Chocolate Chips
- 1/2 cup Enjoy Life Chocolate Chips (for topping) + 1 tbs Coconut Oil
- 1/2 cup strawberries finely chopped For topping
Preheat oven to 350 degrees
Steps:
1. Mix all dry ingredients in a bowl (almond flour, cocoa powder, baking soda, dash of salt)
2. Add eggs, vanilla, coconut oil and honey and continue mixing
3. Mix in Strawberries and Chocolate chips (I wouldn't recommend using a mixer for this, just fold in)
4. Fill greased donut pan. I found this recipe makes 12-16 mini donuts or about 8-10 regular size donuts. You could also use muffin pans but I would add a little coconut milk and slightly more honey to ensure it isn't too thick.
5. Bake for 20-25 minutes or until fork comes out clear when testing. Let cool.
6. Place remaining chocolate chips and coconut oil in a bowl in the microwave for 45 seconds. Stir and repeat in 20 second intervals until chocolate is melted.
6. In a food processor, finely chop the remaining strawberries and fill the "donut" bowls with strawberries. If you decided to make traditional donuts, pour the chocolate drizzle on first then top with strawberries. Otherwise, top with strawberries and drizzle with chocolate syrup.
